Tindora/Kovakkai Fry

Tindora/Kovakkai is eaten as a curry, by deep-frying it along with or without chilli & garlic, garlic giving it excellent taste; stuffing it with masala and sauteing it ; or boiling it first in a cooker and then frying it. It is also used in sambar.It is claimed that these products help regulate blood sugar levels and  is often compared to bitter melon. 


                                              

           

     Ingredients                    
      Tindora (or) kovakkai -15 to 20 nos
      Onion-1 medium size
      Garlic-3 cloves
      Tomato-1
      Red chilli-2
      Chilli powder-1/4 tbsp
      Turmeric powder-1/4 tbsp
     Corriander powder -1/4 tbsp(optional)
    For Seasoning
    Mustard seeds-1/4 tbsp
    Urad dal -1/4 tbsp
    Channa dal-1/4 tbsp
    Curry leaves-4 leaves
    Shredded cooconut- 3 tbsp(optional)
   Method
Wash and slice tindora into rounds.In a pan heat 1 tbsp of oil,add mustard seeds, when it splutters,add urad   dal,channa dal,curry leaves and add crushed garlic cloves.Saute it untill garlic turns mild brown.Add onion, fry them till it becomes transparent,add  chopped tomatoes,saute it till tomatoes are soft.Add sliced tindora, saute it and cover it with a lid. keep the stove on low medium flame.Open and stir it occasionally.When the tindora is half cooked,add chilli powder,corriander powder,turmeric powder,salt.It will become soft when it is cooked,add shreded coconut and stir it.Turn off the flame.Now the yummy tindora fry is ready.It will be nice with rice.
