Coriander chutney

Coriander (cilantro) leaves contains no cholesterol; but is rich in anti-oxidants and dietary fiber which help reduce LDL or "bad cholesterol" while increasing HDL or "good cholesterol" levels.It is also rich in many vital vitamins including folic-acid, riboflavin, niacin, vitamin-A, beta carotene, vitamin-C that are essential for optimum health. Cilantro leaves provides 30% of daily recommended levels of vitamin-C.



                                           
                                        
Ingredients
Cilantro/Coriander -2 bunches
Onion  -1 medium size
Tomato -1
Garlic-3 cloves
Green chilli-2
Tamarind- pea size
For Seasoning
Oil-1 tbsp
Mustard seeds-1/4 tbsp
Channa dal-1/4 tbsp
Curry leaves-4
Method
Wash and remove the stem from the cilantro.In a pan heat 1 tbsp of oil add chopped onion saute till it becomes golden brown,add green chilli,crushed garlic,chopped tomatoes fry them until they are soft.Finally add tamarind,salt and stir.Now turn off the flame allow it to cool.In a blender,grind them like a fine paste.
Season the chutney.Now coriander(cilantro) chutney is ready.
