Brinjal Potato Curry

Brinjal potato curry is my mother-in-laws recpie.She used to make this curry very often.This curry will be nice for idlis,dosas and chappathis.It is very simple recipe and consumes less time for cooking.The brinjal and potato combination will be very tasteful.



                                                           
                                                 

Ingredients
Brinjal(small)-7
Potato(medium) -3(or)4
Onion-1
Tomato-1
Green chilli-1
Ginger-1/4 inch
Garlic-3 
Chilli powder-1/4 tbsp
Turmeric powder-1/4 tbsp
Curry leaves-4(optional)
Hing-1/4 tbsp
Mustard seeds-1/4 tbsp
Channa dal-1/4 tbsp.
                                                  

Method
Cut the brinjal ,potao,onion,tomato,green chilli.peel the ginger and garlic and crush them together.In pressure cooker, add chopped brinjal,potato,onion,crushed ginger and garlic.Add salt,turmeric powder,chilli powder and 3/4 glass of water.Close the lid and wait for 3 whisteles.Turn off the flame.In a pan,heat one tbsp of oil
add mustard seeds,channa dal,hing and curry leaves.Add this seasoning to cooked brinjal potato curry and stir it.Now the brinjal potato curry is ready.
Note
You can also boil the potato and brinjal seperately and then saute with onion and tomato in a usual way.The quantity of brinjal must be more than the quantity of potato for better taste.
